My boyfriend recently surprised me with a slowcooker, but I have yet to use it. I would like to know your favorite recipes you use that also don't require many ingredients. I recently came across one where you throw in some red potatoes, carrots, broth and a chicken and put it on low for about eight hours which I'll probably try soon. Let me know yours!
I like to cook dry beans in my slow cooker. I put the beans on after they have been washed, about 6 cups of water and chicken both, a chopped onion and let it cook about 4hrs on medium. Add some rice in the last 1/2 hour of cooking.
I cook dry beans in mine, too. Then I put them in a variety of dishes and freeze them. For example, I'll use some of the cooked beans in burritos that then get frozen and used later. I'll make some refried beans for the week. I'll maybe add some ham to some and then freeze or eat that as well. I hate cooking beans on the stove now because it's so easy to just put them in the crockpot overnight or while I'm gone to work, etc.
One of my favorite slow cooker meals is a good old fashioned roast beef dinner with onions, carrots, celery and potatoes. It truly is a complete meal in a pot and the meat comes out so tender, regardless of the cut of meat you use. Pulled pork is another easy meal which is basically just pork tenderloin and a sauce of your choice.
