Has anyone tried this Korean staple? It's a spicy pickled Cabbage that's great for whetting your palate.

It's fairly pricey to buy the ready-made, chilled bags of kimchi though. Is it simple and cheaper to make your own? How would one go about doing this, as someone with no experience?

I really love kimchi. I agree that it is better freshly made than out of a jar. I have thought about trying to make some before but I don't keep most of the ingredients around my house. Once I went through all of ingredients I'd need it seemed so daunting! Maybe I'll try it one day.

For now I just eat it when I find good restaurants that have it on the menu.

I've only had kimchi once, at a restaurant, but it was surprisingly tasty. I honestly was not sure what to expect with it, or if the taste (or smell, lol) would be overpowering, but I did not find that to be the case. I imagine that it might be cheaper to do it yourself, but I'm not familiar enough with it to make any suggestions.
